Karela sabzi or Bitter gourd stir fry is a traditional recipe prepared in North Indian style. In this recipe peel of the karela or Bitter gourd is also used while making karela stir fry. The Karela Fry prepared does not taste bitter after this method of cooking which I will share in this recipe.

Bitter gourd / Bitter melon has many benefits like it helps in reducing sugar, prevent cancer development cells, helps in weight loss,reduce cholesterol levels etc. This Karela Stir fry can be used continously for 2 days without refrigeration. This is the reason many people prefer to take Karela stir fry with them for eating during travelling.

Ingredients
  • 3-4 Karela / Bitter Gourd
  • 3 Medium size Onion
  • 1 Tbsp Big Fennel Seeds Powder
  • ¼ Tsp Turmeric Powder
  • ½ tbsp Red chilli Powder
  • ½ Tsp Coriander Powder
  • 1 lemon Juice
  • Salt To Taste
  • 4-5 Tbsp Mustard Oil for Cooking
Recipe Steps
  1. Wash the karela and remove the peel (Chilka of Karela/ Outer Skin of Karela) of Karela and keep this peel aside.
  2. Chopped the karela and its peel into small pieces.
  3. Apply 2 tbsp salt to the chopped Karela pieces and chopped Peel. Mix Well. Keep it aside for 2 hour covered.
  4. After 2 hour, wash the pieces of karela along with chopped peel in water 3-4 Times. Wash with Clean Water each time. Rub the pieces of Chopped Karela with your hands while washing. This step (adding Salt step and washing 3-4 times step) ensures that 90-95% bitterness of Karela gets removed.
  5. Chopped the onions in rings shape (Half Ring or Full Ring of Onion)
  6. Heat 4- 5 tbsp of mustard oil in kadhai. Add Chopped Onion in kadhai and saute it till the colour of the onion changes to translucent pink.
  7. Now add chopped Karela Pieces in kadhai and Mix it well with the onions. Cook it for 10 minutes with the lid covered on low flame.
  8. After 10 minutes add turmeric powder, red chili powder, Coriander powder, Fennel seeds powder, salt and juice of one lemon in the Kadhai.
  9. Mix well and cook this karela fry for another 10 minutes with the lid covered on low flame.
  10. After 10 minutes, Karela stir fry or Bitter gourd stir fry or Karela pyaz ki sabzi is ready.
  11. Serve this karela stir fry with Plain Paratha, Poori or Dal Rice.
